I go through one of the red triangles to blow up some cop cars and the game
decides to drive me over some spike strips.

Bad luck. You can turn off the 'movie view' (or something like that)
in the options, which means you get control of your car when you drive
through the pursuit breakers among other things.

Much better way to play. Be nice to have proper control in the drag
races as well, but what can you do.

Use speedbreaker. While speedbreaker is on, steering is normal.

Thanks for the tip on the view. Drag races aren't that bad once you figure
it out...
